Cereals & Millets are coarse grains and a repository of protein, fiber, vitamins and minerals. They include Barnyard millet, Finger millet, Foxtail millet, Kodo millet, little millet, Pearl millet, Proso millet and barnyard millet.
For those who are health conscious and are wary about what they eat, experts suggest that millets should be a part of their daily regular diet. Millets are nutritious, non-glutinous (non-sticky) and are not acid-forming foods, thus making them very easy to digest.
Compared to white rice or wheat, millets are high on fiber and control blood sugar and cholesterol levels. Idli, dosa or chapatti are easily digested and there will be excessive insulin secretion leading to weight gain. With millets, you eat slow and consume less because of the fiber content.
